Recipe: Citrus Coco Yogurt

I love incorporating more citrus into my diet -- the tang and freshness of the citrus can hydrate the body, boost immunity, and provide a healthy dose of vitamin C. Plus, these fruits add vibrancy and color to breakfasts, juices, and even soups. Use the juice, and the zest, for added zing! It can be as simple as starting your day with a small cup of warm lemon water for healthy digestion. My favorite citrus-burst recipe is the citrus coco yogurt I created for Bobbi’s book Beauty from the Inside Out.

The base of this satisfying breakfast or snack is coconut yogurt, which contains healthy fats and gut-restoring probiotics. Citrus adds a hydrating boost for the skin and is chock-full of vitamin C.

INGREDIENTS

1 cup/240 g coconut yogurt 2 Tbsp chopped pistachios, toasted Assorted citrus fruits (blood oranges, navel oranges and grapefruit), peeled and sliced

STEPS

Divide the coconut yogurt between two bowls and top with citrus and pistachios.
